Okay, so after a week of traveling and lots of eating out, I am SOOoooo excited about today! I've been thinking of recipes all week. I am really excited about running "into town" tomorrow morning after I take the kids to school to get the last few ingredients! To top it off, tomorrow is free pastry day at Starbucks so you know where I'll be going!!! I'm as excited as a kid on Christmas Eve!! Grocery shopping, Starbucks and a free pastry all in the same morning! Yipee!!! I'm not sure if I've every "confessed", but I LOVE grocery shopping!!! Like a painter with paints, groceries are the ingredients to my "masterpieces". LOL! I use that term very loosely, but nevertheless, I do LOVE it and cooking... just not the cleaning up so much. But.. all the moving we've done has turned me into quite the "neat nick" so I've come to appreciate that too! Ha!
Okay, so here goes:
MONDAY: Left overs... I know, I know... how disappointing right?? But today was one of my meeting days and Chloe and I had a picnic in the park this afternoon to enjoy the beautiful weather so that ate up the entire day. Besides, Jarred cooked some delicious bbq chicken and sausage last night and we still have plenty left over. To top it off, it's hard to "plan" Mondays because Jarred & Colby have to run off to soccer practice from 5:15-6:30 and then I have hip hop lessons at 7:15. Not exactly a "family friendly" dinner schedule.
TUESDAY: (New recipe night this week) Bacon-wrapped Maple Pork Loin, Roasted Sweet Potatoes, & Southwest Corn.
WEDNESDAY: Meatballs, Sauteed Onions, Sweet Rice, Fried Zuchinni,
THURSDAY: Chicken Kiev (an old favorite in our house... haven't cooked it in a long time... for those of you who don't know it's chicken filled with a garlic/herb butter, rolled in bread crumbs, lightly fried and then baked. Sooooo good!), Parmesean noodles, Salad, Homemade Strawberry Shortcake
FRIDAY: Left overs (Depending on how the week goes I might switch Wednesday & Friday)
So there you have it! I try not to live life with expectations, but I have to admit I'm really looking forward to eating this week! Thank goodness the weather is going to be nice so that I can run off some of these calories! LOL!
