Meal Plan Monday! (Presented by "Chef Chloe")

This week's menu is brought to you by "Chef Chloe"!

(this is her new favorite dress up outfit and she wears it EVERYWHERE!  I even let her wear it to pick the kids up from school one day last week!  It's just too cute!)

So last night we took a family vote on what would be on our dinner table and the top 3 picks made the cut this week.  Since we are leaving for spring break on Saturday, I'm not going to be cooking a ton because I don't want to waste the food and I'm sure I'll be busy packing, cleaning, etc. LOL!  So, here goes:

Monday:  Spaghetti with meatballs, salad, garlic bread, and corn.
Yes, we just had spaghetti not too long ago, but it's one of Daddy's favorites and I actually "splurged" (LOL) and bought a really fancy spaghetti sauce so even I am looking forward to this one!

Tuesday:  Crock Pot Cream Cheese Chicken (wow! try saying that 3 times fast! LOL!), sauteed green beans with bacon, garlic & onion, and rice. 
This is so far the ONLY crock pot recipe that I enjoy and would highly recommend to anyone wanting a tasty and easy dinner.  I like this so much that I've included the recipe below!

Wednesday:  Left overs.  Yeah for a night off!

Thursday:  Pot roast, carrots, & potatoes, with green bean casserole & rolls.

Friday:  Left overs or eating out. 

Crock Pot Cream Cheese Chicken

4 boneless, skinless chicken breasts (can be frozen)
1 cup chicken broth
1 pkg. Italian salad dressing mix
4 Tblsp. butter (melted)
1 can cream of chicken
8 oz cream cheese

Pour chicken broth into crock pot.  Add chicken breasts.    Pour butter over chicken and sprinkle dressing powder on top.  Place lid on crockpot, turn on to low, and cook for 4-6 hours.  1 hour before serving, shred chicken with 2 forks, and add in cream of chicken soup & cream cheese.  Stir about every 15 minutes to help blend the cream cheese.  Serve over rice or noodles.

  1. Thanks for the recipe! I'm going to try and remember to get it going in the crock pot tomorrow morning! Sounds yummy!

  2. Whoops! Didn't read the part about having to add to it an hour before serving. That's the problem - I won't be there! Still sounds good, but I don't think it will work for Tuesday nights in the Ripple house!
