The Tradition Contines...

(Nope, this isn't about our family's Aggie legacy... I'll save that for another day.  LOL!  )

It started about 8 years go. When Jarred would travel, I'd loose my "mojo" to cook dinner, and settle for a bowl of cereal.  Over time it evolved to the occasional taquito, pop tart, etc. but alas... as the kids got older I had to step it up.  And so the tradition of  "breakfast for dinner" came to be.  For some reason cooking breakfast at dinner time not only seems easier, but it adds something "fun" to look forward to and as a BONUS if there are any leftovers, you get a "free pass" and hopefully in my case a few extra minutes of sleep the next morning!  LOL! 

So last night was our weekly "Breakfast for Dinner"... unfortunately with Jarred's travel, it has actually been a weekly occurence.  I wanted to try something new so I came up with Applesauce Pancakes.  To be honest, it sounded a little too meh, so I in the words of Emeril, I decided to "kick it up a notch" with some homemade Cinnamon Sugar Butter.  Now we're talking!!!  (Is your tummy rumblin' yet?!?!)  LOL!  You can probably guess that this recipe combo went over with rave reviews from the kids! 




 Not sure if we'll ever be able to eat plain jane pancakes in this house again.  They were SO YUMMY!!!  Actually if it were topped with a little powered sugar and I had my eyes closed it comes pretty darn close to a funnel cake!  Gotta love how God works sometimes!  He's so good... even when it comes to the desires of our stomachs!  Just the other day I was thinking of a "healthier" way to create a funnel cake.  Amen!

I wont be stingy with these recipes.  Everyone young & old should try this... especially now that it's fall... in my opinion it just makes everything apple taste even better!

APPLESAUCE PANCAKES

Ingredients:

2 eggs 
1 cup milk
4 Tablespoons vegetable oil
1 cup applesauce
2 cups flour
2 Tablespoons sugar
2 Tablespoons baking powder
1/2 teaspoon cinnamon
1 teaspoon salt

In a medium bowl, beat eggs.  Add milk, oil, & applesauce.  Stir to combine.  In a seperate bowl combine all remaining dry ingredients.  Add dry ingredients to applesauce mixture.  Stir until just combined... mixture will be lumpy.  Be careful not to overmix.

Cook on a lightly greased griddle or pan.  (Serves 6)

CINNAMON SUGAR BUTTER

Ingredients:
1/2 cup butter (softened)
2 Tablespoons sugar
2 Tablespoons brown sugar
4 teaspoons cinnamon 

Combine all ingredients and stir until blended.  Refridgerate at least 1 hour before use.
