Monday... my "fun" day!

Ha!  My Mondays usually require an extra cup of coffee topped with a heaping scoop of positive attitude to get me in a decent frame of mind - today is no exception.  Honestly, I'd like to think of myself as a happy, glass-half-full kind of person, but Mondays ... ugh.. take an enormous amount of effort.  I guess it might be because I happen to enjoy sleep, and 6:15 really isn't my ideal wake up time, but a Mommas gotta do, what a Mommas gotta do! LOL! 

Well, enough mourning the reality of Monday... complaining isn't going to change anything (something I repeatedly tell my children!  Guess I should take my own advice! LOL!).  So, instead of complaining I'm going to reflect on the wonderful weekend we had!  Friday I spent the day buying and planting fall garden plants (broccoli, califlower & lettuce), and mums in the flower beds.  Of course I had my trusty side kick with me, but Chloe was more interested in "rescuing worms" and "baking" mud pies.  Friday night we were supposed to go to the balloon festival and camp out with Colby's cub scout troop, but it was raining.  In fact, it didn't stop raining until around 3:00 on Saturday afternoon.  With the dreary weather I decided to crank up the crock pot and cook the first pot of chili.  YUM!  And when the weather finally cleared up I was able to get in my 10 mile run.  YEA!  I can't wait to get that rush after I cross the finish line on race day in a little over a month, because finishing that 10 miles left me smiling for almost 2 days... so much so that I ran 4 miles again last night.  That makes up 14 of the 35 MILES I'll be running this week!  WOW!  Who knew 6 months ago I could barely run 1 mile, much less 10 at a time without stopping!!!  Fueled by my "runners high" the family & I headed out to the balloon festival Saturday night to see the hot air balloons "glow".



I was hoping the indulge in a funnel cake too, but it didn't happen.  Maybe some other time.  Who knows, maybe that'll be the next "food challenge" I conquer!  LOL!  Yesterday was busy with all the normal Sunday activities: church, football, boy scouts, Awanas, grocery shopping, etc.  And I was able to squeeze in a run while Jarred took the kids fishing with some friends.  It was a perfect day with perfect weather!

Which brings me to today...  Monday.  Rather than sit here and whine about being a "single mom" again this week, etc.,  I'm going to focus on something that does make me happy!  Cooking!  It's time to fire up your ovens and get ready for MEAL PLAN MONDAY!!!

MEAL PLAN MONDAY!

Monday:  BBQ Chip Chicken, Pea Salad, Sweet Rice, Fresh Apple Cake

Tuesday: Frozen Fiesta (fish sticks for the kids & who knows for me! LOL!) 

Wednesday: Breakfast for dinner!!! (the "tradition" continues!) 

Thursday: Crock Pot Cream Cheese Chicken, Brown Rice, Corn & Green Beans

Friday: Meatballs, Mashed Potatoes, Fried Okra & Peaches

Well, I'm off to go enjoy the beautiful weather & plant the 100 tulip, iris & daffodil bulbs we bought yesterday!  Wish me luck!!!

  1. I'm impressed at all of your actual "cooking" while Jarred's away. With Kevin gone this week, too, we're having "frozen fiesta" more often than not! ;-)
