Meal Plan Monday!

Two posts in one day!!!  Whoa baby!  You'd think I was trying to be an over-achiever.... honestly, I'm just trying to stay awake.  LOL!  I woke up at 2:30 this morning and couldn't go back to sleep.  Ugh.  Not even 4 cups of coffee can kick the case of the yawns I have today.  I'm really going to have to dig deep for this afternoon's activities too... we're taking the kids on a surprise trip to the fair after school.  I absolutely LOVE surprising them!!!  Seeing the looks on their faces is priceless!  And I'm looking forward to the fair too...the food, the booths, the rides... although I think I'll pass on riding the zipper with Colby.  The last time I did that I was probably 13... but it's been all he can talk about.  I'll pass that torch to Dad! LOL! 

What I'm more excited about is the food!  I'm not a huge fan of fried food, but for some reason fairs just seem to make everything taste better!  I guess I'll have to try to compensate the rest of the week by eating healthy! LOL!  So, here you have it... make some noise for MEAL PLAN MONDAY!!!!

MEAL PLAN MONDAY

MONDAY: Fair Food!!!!  I'm SOOO sooo excited about eating a funnel cake!  I had an extra healthy lunch and ran 3 miles this morning so I could go all out this evening.  Hopefully I'll sweat out all that grease on my 4 mile run tomorrow! LOL!  Can't believe I'm almost halfway through my marathon training!!!

TUESDAY: Colby's 8th Birthday!!!!  Poor guy has soccer practice AND a boy scout meeting so we can't even celebrate.  I'm going to do the next best thing and make a few of his favorites: Baked Ham & Cheese Sandwiches, Lemon Whippersnapper Cookies & hopefully surprise him with inviting a few friends over for some birthday cake for an "after school snack!"

WEDNESDAY: Eating out!  Colby's pick!

THURSDAY: Lasagna Roll-ups (*New Recipe - it's supposed to be healthy & tasty too!  Got the recipe from the Today Show.  I'll let you know how it turns out.), Roasted Broccoli, Applesauce

FRIDAY: pizza night --- Jarred signed us up to work the A&M Club French Fry booth at the fair Friday night so the kids will be home with a sitter.  Should be fun!

  1. Eat a funnel cake for me! Those are my absolute favorites (no fruit, please, just powdered sugar)! YUM! The french fry booth sounds like fun! I remember stopping by there when we lived in Abilene and went to the fair!
