Well because we had people over for Easter dinner, the house is clean. Yesterday I managed to get the laundry done AND put away, and I went "to town" to run the few errands I had left to get done this week. Soooo, what to do, what to do??? Ironing keeps coming to the top of the list. I HATE ironing; however, I like the way pressed clothes looks. Who knows, maybe it'll grow on me... some day. Ha!
With all my normal "jobs" done, I'm lost as to what to do with my day. Trust me, this is a rare occurance. Unfortunately tt's cRaZy windy outside so that takes a lot of options for Chloe and I out. When all else fails my mind always wonders to food. According to "the menu", we're supposed to have BBQ chip chicken tonight. It's one of the kids FAVORITES, but not Jarred's. Sooo, I came up with a suprise compromise. Homemade Fried Chicken!!! MMmmm! I haven't made that in forever!!! I think I'll do green beans and mashed potatoes & gravy, and Oohhh Strawberry Shortcake. I had it on the "menu" last week, but I haven't made it yet because we kept eating the strawberries. Ha! I bought more yesterday. I have this great recipe where you make a light shortcake and then bake a meriguine on top. You layer it with strawberries and fresh whipped cream and (in the words of Rachel Ray)... Yum -O!!!
I am sooo excited about the warmer weather finally here to stay!!! Even though we're supposed to have a cold front come in today, the highs tomorrow will still be in the low 70s. I'm just a happier person this time of year!! There is something to be said for the freedom of enjoying the outdoors and the fresh air! Not to mention the much cuter clothes! LOL!!!
Well I'd better get moving. All this thinking about food is making me hungry, and I have lots to get done if I'm going to pull off this yummy "southern" dinner, do some dreaded ironing, and make the obligatory trip to the gym.
